Celebrated Labour Day a day early. Six racks of St. Louis ribs from the freezer, cooked modified APL way in pellet pooper. No close up money shot but it had decent smoke ring, smokey and pull-off-the-bone nice. Finished almost three racks and distributed the rest. Excuse the photo dump.
(The dark areas are not burnt, they're drippings from rack above, looks ewww but tastes just fine)

You always bring it in great style. What a banquet. I would crush that salmon. @HeavyG just reminded me of how I came up with the thread title...
For years there's a ribfest at the park across from our house, we never attended until this summer. There were 5-6 vendors mostly from the US. $2 admission and $34-$38 a rack. The ribs had no smoke profile, almost like braised then thrown on roaring fire and mopped just before serving; beans were bland; cornbread was dry like cardboard. Let's just say it was our first and last experience.canuckland -
