Pepper Stout Beef

Here's another oldie but goodie: Pepper Stout Beef.
The catalyst for this evening's dinner was my wife adding dark beer to her grocery list last week, I think for chili. I capitalized by selecting Guinness and setting myself up to make this recipe yet again.
For the first time in a long time, got a decent cut of chuck roast from the butcher counter. This one was about 4 lbs. Season liberally with worcestershire, salt, and pepper. I put the 7yo to work with the pepper cannon.

Vegetables and some more worcestershire.
After three hours at 250F over some oak wood, this is how she looks.
Guinness bath then ready for foil and back on the grill.
Buns hon.
Final sandwich. I did it Larry style with lots of horseradish and some pepper jack cheese. Yum. I ate three. 7yo went for two sandwiches. Win.

@briwald- there are a few members here who trigger the auto dislike response. I don't know or care who the "dislikeowarts" (Props to @Canugghead) are but they don't "front up" never mind any "stones" and also have no "spine." Some suggest they live in a parent's basement. FWIW-
