Long time lurker but don’t post much. I was gifted this Chuck roast from Snake River Farms and I have no idea what to do with it. My wife wants to make a roast out of it but I think we should grill it or something. Any ideas?

I’m watching this as well. Seems a waste to cook it like a traditional tough pot roast.Thank you,DarianGalveston Texas

Barbacoa A La Cen Tex. Can’t forget the pickled onions.

Tough question as a chuck cut benefits from low and slow cooking and dang near every time with a braise. I would give them a call and see what they offer as I did not see a chuck roast on their website.Wish I had more-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Maybe a little low and slow with some smoke followed by a 20 hour sous vide and then a sear.Thank you,DarianGalveston Texas

Oh man. I think it would take me a month to find all those ingredients. I’m trying to cook it tomorrow before my wife grabs it to boil it.Dyal_SC said:Barbacoa A La Cen Tex. Can’t forget the pickled onions. -
With as much marbling as that I would treat it like a steak. I would reverse sear it indirect, and then drop it in the coals caveman style. It doesn’t appear that thick.Columbus, Ohio--A Gasser filled with Matchlight and an Ugly Drum.

That’s a cool idea. It’s thicker than it looks. It’s almost 4 pounds! It’s like 3” thick if I had to guess.Jstroke said:With as much marbling as that I would treat it like a steak. I would reverse sear it indirect, and then drop it in the coals caveman style. It doesn’t appear that thick. -

That’s way to complicated for me. I’m going to smoke it like a brisket. I have seen a lot of guys doing it on tiktok and it always looks amazing.caliking said:That barbacoa cook looks mighty fine. -
I have been using Kamado Joe Big Block from Lowe’s. I never knew you could get such good coal at a store like that. The chunks are huge! My egg always went out when I tried the other stuff. Too many small pieces but not anymore!

All rubbed up and ready for some smoke. -
You guys do some crazy complicated cooks on here. That’s why I don’t post much- mine are always so simple! This piece of meat was just too good not to post though, so wish me luck!Slkegger said: -

Well, it was really good! Was super tender but some spots were more than others. I chopped it up and ate it in a sandwich mixed with some sweet baby rays. It was awesome. If it gets any better than this I don’t want to know about it! Thank you all for the help. I have to find out where my friend got this meat

Looks good! What seasoning/rub did you use? temp? Time?
-
I just did salt and pepper for the rub. I cooked it at 250 but it shot up to 350 for a little bit while I was out working in the yard. I caught it before it did too much damage. It took about 4 hours once it went onJohnfromKentucky said:Looks good! What seasoning/rub did you use? temp? Time? -
That turned out pretty swell!
