OT 2023 Family Day

Celebrated our Family Day (Monday) early with some hodge podge dishes for our gathering...
Dug out a bag of dry aged beef carpaccio from the freezer, googled and made ponzu sauce for it

Pellet pooper is my go to chicken machine, made extra for take-out

Little man seasoning the par cooked spuds

Tried 10hr SV pork belly, Serious Eats calls for 170F, others say 165F, so I split hair and settled for 167.5F
Ice chilled and smoked couple of hours then seared, was hoping to get blistered skin but gave up as soon as I saw grid line char, settled for soft bite through skin.

great flavour and tender but not mushy

swmbo made the bao wrap, served with lettuce, quick pickled cucumber and hoisin sauce. Much better ROI than the recent peking duck!

Super easy, just trim up unseasoned eye of round roughly into small logs and leave them in fridge uncovered for few weeks, don't remember how long I think I squeezed it once in a few while until the firmness 'felt right'.
