Some great looking cooks here.We were lucky, in that we were hosted by very good friends with whom we have a longstanding tradition of spending NYE together. 18 years since our first. He is a former sous chef in what was one our city’s most highly acclaimed restaurants in the early 2000s. He made us a beautiful radicchio and endive salad, followed by magret de canard and roasted veggies. We then had both chocolate mousse cake and lemon curd pie. Took a momentary cigar reprise accompanied with scotch, then dove back in for a full charcuterie board featuring assorted meats, cheeses, fruits and micro greens to pair with the champagne.No photos; I really had to resist the urge to break out the camera.I really respect that man. He is largely responsible for my interest in cooking. Making a livelihood in the kitchen is not for the faint at heart. Long hours, horrible schedules, modest pay, often-transient workforce, etc. I understand why he is no longer active in the industry.

@l@lousubcap Hi Cap this is the recipe we used from a family member back in SA, we did a slab of belly and not a roll. It was a challenge to do at such high temp and not have the smoke alarms go off😉 temps in the recipe are CentigradeGreensboro North Carolina

@johnmitchell - Thanks and coincidently that is close to a recipe posted here by @CPFC1905 a few months ago. Just the steak and a quick, hot sear in the pan. Going in I said I was only going to do this once, but that is no longer true. A treat annually seems about right. Served with some lobster tails, too, but this was the star.

@chard - Once you go down the Japanese A5 rabbit hole you will never escape. I have never done cocaine but that steak is crack to me. I doubt you will be able to hold out to annually.
And it is every bit worth it...
