    It’s a duck breast from ducks used for foie gras. Basically, fat mother-duckin’ breasts.

    @l@lousubcap Hi Cap this is the recipe we used from a family member back in SA, we did a slab of belly and not a roll. It was a challenge to do at such high temp and not have the smoke alarms go off😉 temps in the recipe are Centigrade

    @johnmitchell - Thanks and coincidently that is close to a recipe posted here by @CPFC1905 a few months ago.  BGE is a great platform for cranking up the cook temp and enjoying the outcome.

    @chard - Once you go down the Japanese A5 rabbit hole you will never escape.  I have never done cocaine but that steak is crack to me.  I doubt you will be able to hold out to annually.  
    And it is every bit worth it...
    That steak is quite a good bit given the richness I hope you had help.
