How long would you go with a prime rib roast covered in dry brine above 40 degrees

    At least a day is the usual rule of thumb with prime rib I think.

    At least a day is the usual rule of thumb with prime rib I think.  
    Was going two days with the brining. The powers out so wondering if the salt will be enough to keep it safe if temp drops into the fifties in the fridge til tomorrow. Didn't want to freeze it in the outside cooler. Could cook it today but that wasn't in the plans.might just flip a coin

    Best I ever did was last week 48 hours ( it was a rosemary and thyme ) peppered day of …I’m sold on salting big hunks that early, would not do it on small cuts

    Just to clear this up. 48 hours in. A 55 degree kitchen sitting on the counter...

    I am basically guessing how long to brine a big hunk of beef in the middle of my house when the power's out and it's cold as F out.

    Put some ice/snow at the bottom of a cooler. Place the PR in a bag, on a sheet pan type of thing, then into the cooler. Keep it in the house. 

    The bag is insurance against the meat tipping over into the slush at the bottom of the cooler.

    Or, bag the snow/ice when putting it in the cooler.

    Have some chilled water bottles in the fridge. Going to lay those in the roto mold cooler and rest the roast on top on a rack. Leave it outside should work without adding Xtra moisture
