A church near me has a group of guys who built a couple of rib cookers and host an all you can eat dinner every August. Right before Christmas they take orders for about 1000 slabs. Thought you might enjoy some pics:
Yes, they are inside. Last year they cooked outside during a snow storm that collapsed their canopies. This year they moved inside a welding shop. The exhaust fans kept up but just barely.
There were a little over 700 slabs between the cookers. After this batch was done they put on another 500 slabs.
They sauce them as the pull them off then to a refrigerated semi trailer to chill and wrap them.
In the end they sold over 1200 slabs. And since I hadn't purchased in advance I went home hungry.
