what to do with this meat?

Trimmed up 2 rib racks and have all this meat. Sure, there's some fat, but that's a lot of meat that I don't know what to do with it. What I have read and watched about trimming up ribs doesn't mention what they do with this. I hate to waste it, so what do you all do with yours?
Thinking of cutting it up for a beef stew, but hoping someone has some good ideas.

Cook it as chef's treat. Save and toss it in with a pot of beans. Cook and use anywhere you want rib meat-nachos, omelettes etc.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I grill it over smoke wood for 1 hour, then foil for 2. After that, use in baked beans.
