I love Pho. We have a Pho house near us that does an amazing job. I prefer the beef but the chicken is awesome as well. I'll add an amusing Asian restaurant sign I found in my travels (Cooperstown, NY)

Jinya Ramen has a former menu item that went off menu (probably to drive demand because they like to tell you it’s off menu) called the Cha Cha Cha that is garlic and pork to the extreme. It’s on the short list with maybe a dozen other foods worthy of sneaking away by myself to sit at the bar and enjoy undistracted. I hope you find a few in your new proximity.

Ramen - you can fry it. Hard to fry pho.When you cook the ramen, use only half the liquid. Then you can fry the ramen and add whatever veggies and protein you want and sauce to choice.Somewhere on the Colorado Front Range
