I am totally blown away that skirt and even flank steak is now at almost $18.00/lb.  Seriously?? This used to be like $1.29/lb.

They’ve become in-demand cuts, they didn’t used to be respected cuts of meat.

Same as brisket and chicken wings.

$1.29?  That must have been before my time.  It is $12 here and maybe I can recall it being $7 or $9.

When you were buying skirt steak for $1.29 per pound, how much was gasoline?

have never seen it below 9, i can only assume its hovering around 27 here now. i probably had 50 or so bucks in beef in my last chili which was chuck and a flat

I only buy skirt and flap. Those are my favorite cuts and I use them for everything. I get Snake River Farms Wagyu for $12.99 lb (skirt) and $14.99 (flap) down here these days. Seems pretty reasonable for the quality.
