Filet w/ rajas con crema

Filets salted few hrs early, kept uncovered in Fridge on rack. Reverse sear, with final sear on bluestar broiler. This broiler gets HOT!
Made Rajas con crema following this recipe. I added fresh corn (knife off kernels raw, added with milk) First time making it (looks broken but flavor was excellent). we felt it tturned out Pretttty Prettty tasty. Leftover Rajas will find a home in some homemade tortillas later this week.

Thanks. I was shocked the RAJAS recipe had no cheese, just milk & sour cream. All those fire roasted poblanos make an intense flavor, loved the combo with lean tender steak.Columbus, OH
