A couple of recent cooks!

What's that Mark Twain saying?  Rumors of my death have been greatly exaggerated...

Couple of recent cooks while I was away I thought might be of interest to y'all.  The first is a twist on some kind of crostini type thing that Sam The Cooking Guy came up with.  Thanks again to @Botch for putting me on to Sam and his recipes.  He is not for everyone personality-wise (why does that sound familiar?) but the cooks he comes up with are pretty cool.  Here's the video I mostly followed:

If you don't want to bother watching the steps are pretty simple.  You get a French baguette and lop the top 1/3 of it off, then you dig out the bread to make a canoe:


There's a garlic aioli sauce that then goes in, followed by some mozzarella cheese and then grilled peppers and onions:



Sam added another layer of mozz, but I thought it would be better with some gruyere, since the bread is sourdough.  I think I was right because that was delicious.  Anyway, then you top it off with Italian sausage and throw it on the BGE grill.  I went direct for two six minute segments, with a rotation.




You top it all off with a homemade salsa verde that has a nice tang:



One heck of an appetizer.  This is delicious.  I definitely recommend it.  A bit of a pain to bring everything together but your guests will be impressed by your mad skillz if not your hot wife.  Well OK maybe that latter part doesn't apply to everyone, but we all don't look like JFK Jr either so take what you can get.

Last night's cook was an SRF dry-aged ribeye.  This I reverse seared in the KBQ but this protein is so good you could surely do it on the BGE and it would be every bit as delicious.  These steaks are not cheap but worth picking up when they have sales, or even when they don't.







Melt in your mouth delicious.  I served it with an Asian salad but who cares about that?!?!?
