4-5 hour cook on the consommé with short ribs that were ultimately shredded and added to the dish.
Wagyu burgers with simple salt, pepper, garlic.
Green sauce is a cilantro garlic lime aioli.
Fried tortilla is a tostado’ish with cheese and flaked salt.
Ultimately I was playing around with Josh Weissman birria burger recipe. Turned out pretty tasty!!
