I prefer hickory flavored bacon and would like to get some ideas and techniques.

    Smoke with Hickory, that being said, Hickory Salt from The Salt Works ( seasalt.com) will get you there, just use that in your cure

    Search for hickory salt on Amazon.  You’ll likely find 50 or so varieties.

    OK, so once I have the hickory flavored salt and the pork belly, then what?
    Do I need anything else?
    Some hickory to smoke with?  That and curing salt.

    You just doing a smoked belly or do you want to convert it to bacon ?

    My basic bacon is1.75% salt ( hickory for you ) .25% cure 1 1.17% brown sugar ..25% garlic powder .13% onion powder.25% dry thyme .15% bay leaves.5% Calabrian pepper .5% Juniper berries…,all you really need is salt , everything else is optional 

    vac seal for 7 days … smoke if desired , I recommend giving a week or 2 of drying
