Memorial Day - Whats on your Egg?
Meet

I’ve got two 7 lb pork butts (one bone in, the other boneless) going right now.
The early morning was rough but there’s something to be said about preparing the egg the night before. What are y’all cooking?
Happy Memorial Day!

I'm looking at a 410 mile road trip and racing against 70-80 mph winds and tornados this afternoon.
I'll be cooking 4-5 pork butts next weekend and some miscellaneous other meats. Hopefully make up for today's lack of Q."The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

I did all the big meat yesterday. Today, I will put about 8lbs of top round that I sliced and marinated overnight, on the egg for 20-30 minutes, just to pick up some smoke, then into the dehydrator for jerky.

I did a Black grade SRF brisket, delivered at 14.6 pounds, trimmed down to 11.5 pounds when it went on. I went old school with the brisket, using a “Daisy Wheel” I purchased in a clearance sell that fit my XL ($5.00).
just pulled it and packed it into the yeti, wrapped for serving later this afternoon. It felt like jelly in the wrap. Can’t wait to taste the results, used another “old school” rub.
This is Memorial Day. Please think of those whose lives have been impacted by the loss of a loved one. Those are the people I thank everyday, and today, even more so.
Happy Memorial Day everyone. Enjoy this day."Knowledge is Good" - Emil Faber
