Grilled Lamb chops with sauteed arugula , grilled polenta, blue crumbles and garnished with parsley gremolata.

How do you keep the polenta from falling through the grid?

    Pepperoni pizza rolls
Ummmmmm, I'm gonna need some details here..........
It's very easy! I cheat and get the Pillsbury pizza dough from the chilled biscuits and rolls section at the store.  I have a pizza stone setup with an air gap (tin foil balls) over the legs down conveggtor.  450-500F

Roll out the dough in a square shape as much as possible.  Use a pizza cutter along the diagonals to form triangles.  Place a little bit of sauce, cheese, and pepperoni along the long end of the triangle.  Take the wings of the triangle and fold them in over everything.  Take the contents side and fold it over until it's in roll form.  The idea is that nothing is spilling out as you roll it up.  Score the top a couple of times for venting. Place on the pizza stone (I use parchment paper underneath).  Cook for 8-13 minutes until the crust is golden brown.  Voilà, wood fired pizza rolls.

I'm looking at a 410 mile road trip and racing against 70-80 mph winds and tornados this afternoon.

I'll be cooking 4-5 pork butts next weekend and some miscellaneous other meats. Hopefully make up for today's lack of Q.
Did you make it back? I rolled into town around 8 pm and the skies were crazy. Hit Fridley and the sun was back out

We did. Thanks for asking. We were constantly watching radar on our phones and trying to stay out of anything nasty. We did hit some hard rain and light hail at one point but did our best to stay ahead of it. There was a couple tornadoes south of us that ended damaging about a 100 houses when passing through Alexandria. I passed a couple state troopers that were out of their cars watching the sky when driving out in the middle of nowhere about 25-30 miles into the trip. I remember thinking, I have 375 miles of this? One of the nice benefits of a smart phone is being able to track stuff like this. We also hit a couple of those storms where the sky was dark and a few miles later it was dry and sunny. Crazy how that works.
