SWMBO insists on having rosemary mashed potatoes made with heavy cream and lots of butter when I make beef ribs. I also typically make Mac and cheese, coleslaw, pickled beets, and home made pickles. Oh man. There is so much you could do.
I like beef rib, coleslaw (with some ACV in it), wrapped in a tortilla vs. white bread. Maybe a touch of vinegary bbq sauce.
Beef rib fried rice.
Valentina's-style Real Deal Holyfield-ish... beef rib + salsa + fried egg, wrapped in a warm tortilla. Maybe sliced onions.

Holy meat sweats. Here was the outcome. Ended up serving with pretzel bites, Mac n cheese, baked beans, corn bread, and pickles. Jim beam and dr peppers for lubrication.Lakeville, MN
