Pork Steak Recipe

Sliced some steaks off a shoulder last night and used this recipe.  Family scarfed them down too quick to get pictures but I'll for sure be making it again.  Direct at 400 until 145-150 degrees.  The fish sauce gives it a different take on pork.
  • pork shoulder steaks , (aka pork butt or blade steaks) sliced 1/2"-3/4" thick
  • 1/4 cup (56 ml) oil
  • 2 Tablespoons (30 ml) fish sauce (or soy sauce or Worcestershire sauce)
  • 4 cloves garlic , minced or crushed
  • 1 Tablespoon (15 ml) brown sugar
  • 1/2 teaspoon (2.5 ml) onion powder or 1 minced shallot
  • 1/2 teaspoon (2.5 ml) kosher salt
  • 1/2 teaspoon (2.5 ml) fresh cracked black pepper

    Interested to try this , always just used BBQ sauce .  Not familiar with fish sauce, not even sure I could find that here.  Do u recommend Soy sauce or worchestershire ?

    Try to find an Asian market. Likely have it there.

    Interested to try this , always just used BBQ sauce .  Not familiar with fish sauce, not even sure I could find that here.  Do u recommend Soy sauce or worchestershire ? 
    The OP’s post contains a link to buy it on Amazon.  It’s not too expensive.  Probably worth just trying.

    @lentsboy007 , a good fish sauce is a great staple to have , will add that Umami to your cooks, little goes a long way

    For sure , Soy is one dimensional while Worcestershire is more complex

    fish sauce is in most large markets now, even at walmarts.  worcestershire sauce is a fish sauce but it has other flavors added. if you have never used fish sauce, dont open the bottle and take a smell, ok, now you will

    Shrimp Paste smells worse but is a great hidden ingredient

    I am glad to hear you found some between yesterday at 3:42 and today at 8:23.  Was it easy to find?  I've never bought it. 

    Sorry to hear you had a reaction to it so quickly.  

    Did you just taste the fish sauce, or did you make the pork steak?

    That is one fancy pork steak. If I tried that my family would go WTF, where's the Maul's or Sweet Baby Ray's.

    I like the fish sauce over the other two options.  Fish sauce is a nice change from the other two.  Gives it more of a Vietnamese aspect in my lowly opinion.

    This^^^ sometimes I use it in place of salt.  Adds the saltiness with the umami kicker.

    Don't tell your problems to people.  80% of people don't care and 20% are glad you have them.
