Eggplant jerky - looking for recipe

Does anyone have an eggplant jerky recipe that I could make on the egg? I am making real, far superior awesome beef jerky this weekend, but wonder if I could just marinate and prepare eggplant in the same way. I normally don't do vegan/veggie, but seemed good to try it this once.

Target temp around 100°C / 225°F. I want to get it done in one session so do not want to modify my recipe.

Eggplant because readily available and inexpensive for a first try.

i've done it in the dehydrator , salt you slices a drain on a wire rack first to get the excess water out, then use your recipe minus the salt

so is it good or more like something you might use for a dip

@fishlessman, more like a healthy chip ( less like jerky) , they crisp up pretty well and take on favors well

LoL----Eggplant is the Tofu of Veggies , it can be anything
