Eggplant jerky - looking for recipe

Does anyone have an eggplant jerky recipe that I could make on the egg? I am making real, far superior awesome beef jerky this weekend, but wonder if I could just marinate and prepare eggplant in the same way. I normally don't do vegan/veggie, but seemed good to try it this once.
Target temp around 100°C / 225°F. I want to get it done in one session so do not want to modify my recipe.
Eggplant because readily available and inexpensive for a first try.

i've done it in the dehydrator , salt you slices a drain on a wire rack first to get the excess water out, then use your recipe minus the saltVisalia, Ca @lkapigian

Will definitely try this method. Hope it works out.
