They have finally picked a date & 2 categories, chicken & pork recommend 25 servings.
So I'm thinking of Pineapple Gems & Bacon wrapped pickled watermelons rinds for pork  :)
Chicken: I'm thinking of making Malcolm Reeds chili stuffed (with cheese) boneless, skinless thighs and
cut up in individual bites.
Any other suggestions?

    That marinade is killer on any form of chicken, so if you wanted to do chicken tits or thighs I'm sure it would turn out a crowd pleaser.

    For pork it's hard to beat Malcom's pork belly burnt ends.

    One thing I’ve figured out in friendly competition is not to go over the top. Pick something everybody knows but cook it in its most excellent form.  You gotta keep in mind that not everybody gets into the crazy stuff we like to experiment with and that will hurt your judging results.
