Killer recipe featuring zucchini?

A neighbour has had a really successful crop of zucchini this year and has given us a whole bunch of it. Does anyone have a great, simple-ish zucchini recipe for a quick weeknight dinner? Could be a recipe for either a main course, or for a substantial side, to be served with a protein like a steak or a pork chop.

made this a few times this summer, added kalamata olives, cherry tomates, dry roasted pumpkin seeds, roasted red onion, more herbs. i give the zuchinni a short marinade before grilling which you can do aday ahead if you want it served cold. its also a good lunch when you make enough for leftovers

this is an quick and easy side. Make the vinaigrette ahead of time.
I quarter the zucchini vs slicing it thin, and then cut into cubes after it is grilled.

Heavily bastardized recipe, but you get the idea. Threw in some fried tofu and double smoked back bacon. All set to bake and broil.

Super easy, and makes a nice light dinner with bread. Also reheats well so it works for lunches.
We never do the raw zucchini garnish, just a drizzle of olive oil, flaky salt, and ground Italian chili flake.LBGE

I make a zucchini spaghetti that uses a spicy gazpacho for the sauce. It is very good, but takes a little time to prepare. If you are interested I will find the recipe.

I have always like zucchini but we learned to love it in Tuscany. This olace we went to dinner several times would pull our salads and zucchini out of the garden to order. They sliced it longways about 1/4” thick on a madndoline. They lightly salt it and let it sit for 30 min or so to pull some
of the moisture out. Dry wit paper towels, cost in evoo, add some cracked pepper and grill. . I just sear it on ones side at like 500 for 30-45 seconds (until you get some nice grill marks). Grill Grates makes this bery easy and leaves great char marks. It is so simple and so good. We make it all the time. The salt pulls the water out and really intensifies the flavor. My go to are stuffed zucchini boats. Cut in half the long way and hollow out the centers with a spoon. Fill with your stuffing of choice. Our fave is hot Italian sausage with diced sautéed mushrooms, and onions. Cooked indirect at 350-400 until zuke is to your liking. Finish with some grated parm, mozz or whatever your flavor. Protein is the key variable. I’ve stuffed them with anything from Italian sausage to bbq chicken or venison. One of my go-to’s on this low carb adventure I’ve been on since the beginning of the year.

I forgot to mention, make zoodles out of zucchini.
I've done shrimp scampi, and the zoodles also do well making a wanna be chow mein.
