I smoked 2 Slabs of Prime Beef Plate ribs on the XL today. Total cook time was 7 1/2 hours. Started at 225 grate and raised the temp to 275 toward the end. Wrapped in butcher paper and rested in the cooler for an hour. This was the best batch of beef ribs that I have smoked so far.
