Seventeen Pound SRF Black Brisket Overnighter

With some guiding instructions from folks on this forum and others, I'm onto my fourth brisket cook. Tonight I've got a 17 pounder SRF Black Brisket going. Dusted with Holy Cow, smoking over some Red Oak from Fruita. About to go to sleep as the Egg is right at 250.

Looks beautiful, when I did mine for NYE, I trimmed nothing. Fat cap down. The entire cap rendered off during the cook. It was marvelous. You’re in for good eats there my friend

I woke up at six and could still hear fat dripping out of it. Went back to sleep and came back an hour later. She's done! 12 hours at about 250.
