The kids have flown the coop, the grandbabies don't like smoked food, sitting at home because of the COVID and still the passion for smoking continues. With only two of us here to eat doesn't make much since to do a humongous brisket anymore, we get tired of a whole smoked salmon fillet before we can finish it, a couple of pork chops are great but worth the effort? Not always. Same with veggies or a couple of eggplants for Baba Ghanoush. Sick and tired of chicken. Got a 1 kilo chunk of silver tip shoulder - au jus - will be cut in nice slices for dinner and will be good for a couple of days of French Dip sandwiches. So before I turn my Egg into a hamburger/sausage grill I would really appreciate more ideas for small cuts of meat.

The other option is to cook full sized meats that save or repurpose well-
Pulled pork and can be vacuum sealed and reheated with solid results. Leftover brisket is great on nachos, chili, pizza, breakfast hash, etc.
Also explore pushing yourself to explore the other uses of the egg. It makes a solid pizza, can be used as a tandoori, push your normal recipe arsenal with stuffed and rolled pork, chicken ballottine, smash burgers, etc.
I have been in a rut lately making the same things over and over- so this post is timely to help me explore the possibilities. When I first got me egg I tried it all and constantly found new things we loved. At least for me, it’s time get back to that period.Greensboro, NC -

There are many small options for your consideration.....Tuna steaks.Green lightning shrimp.Oysters on the half shell.Lamb loins.Pork chops.
Squid.
Pork belly.I like beef chuck to satisfy my urge for a low and slow in a scaleable format. A small piece will leave you with enough leftovers for another meal or two.You say you’re tired of chicken. The options are nearly limitless. -
I also suggest using a Wok for fast cooking meals. Fast cook but a lot of prep work. I find it a nice way to get different tastes in the meats we regularly eat.Dave

Scruffy, I find that, on occasion, I just need to leave the Egg alone, and go get some sushi, or cook up some spaghetti with garlic, pepper, pecorino and EVOO.___________

We are empty nesters. Lately, about once a month I’ve been smoking boneless turkey breasts. One meal makes turkey and gravy, another meal is turkey sandwiches and and another meal is quesadillas or tetrazzini.Also, we’ve been ordering a lot from online meat sources. I understand, and agree with the previous posts. I have a food saver, however, I love to cook on the egg with more involved recipes.

Meatloaf is good and freezes well. I just bought the ingredients to make my family famous turkey meatloaf to carry to my folks in the morning. I'll make a double sized one using a bit over 2 pounds of turkey. I'll use the inside oven instead of the Large though.
