Chicken Kati Rolls - for a group (no pics yet just idea)

As spring nears & social life returns, looking to have neighbors over more. Just found this recipe seems perfect for a serve yourself style food that is fresh for spring.  I remember making a similar Indian “street food” roll years and years ago with the help of @caliking - but can’t the specific post I remember.  

Recipe below is not great, but the idea is.  Any thoughts/tweaks to this recipe and/or good sauces / chutneys that I can add to the assembly line?!?

    Never heard of this, but looks great. I'm a big fan of doing build your own for gatherings.  My favorite is pizza. I make a bunch of personal sized doughs and put a variety of toppings, cheeses, and sauces.  I then put them on the grill as people hand them to me.

    Yea @JohnInCarolina should be great for a outside gathering, right? Hold in your hand and walk around, & flavors that will surprise most.   

    The recipe I posted above uses dry rub, I was looking more at a spiced yogurt marinade (maybe) . . also very curious about indian condiments to pair.  I remember talk of a spiced mustard, etc that pairs well ??

    All I remember is that it was delicious.  I’m sure @caliking will be along here when he’s free to chime in.  My one regret from that day in Salado is that I didn’t line up for seconds.

    you will want to make these. there were (at least) 2 marinades and I know at least one of those in yogurt based. There is nobody that can steer you to a better recipe (assuming he used one) than Cali on Kathi Rolls.

    Yep, kati rolls are a fun cook, and a crowd pleaser to boot.

    Some tips:
    1. I would skip adding yogurt to the chix marinade

    2. I've griddled the onions in the past, and Pops reminded me that they don't do that in Kolkata.

    Make a "salad" of sliced red onions, lime juice, cayenne powder, salt,  and dress the filling with it prior to wrapping.

    3. If you have an Indian/Pakistani store near you, they should have things like the cilantro chutney, Maggi Hot n Sweet Ketchup etc. The chutney is easy to make, too.

    I often make this as a sort of dipping sauce, or dressing:
    Yogurt 2 cups (use Greek if you want it thicker)
    Sour cream 1/4 cup
    Cilantro 2 bunches
    Mint several leaves
    Thai chiles 4-8
    Garlic several cloves
    Sugar 1tsp
    Salt to taste

    Blitz it all together in a blender or food processor. Add more sour cream depending on how creamy you want it to be. 

    4. For the parantha/flat bread, the Indian store or Asian store should have this (or something like it):

    @NDG I hope you have fun with this. Don't get too hung up on the chix... there are many flavors at play here, and you can't really go wrong.

    I would probably go with a dry rub, but a marinade would be great too. I personally am not a fan of acids in the mix (yogurt, lemon/lime), or store/jar marinades. They are easy to make yourself, and will taste mo' bettah.

    In fact, you've inspired me to get this done this weekend!
