On that same note some beef is actually better (in my humble opinion) wet aged. The more fatty cuts are better dry aged. The leaner cuts are better wet aged. Just my thoughts and preferences.

Not quite. Broiling is also grilling without most (not all) of the burning fat drippings flavoring the meat.PigBeanUs said:
