SRF Black, Nekkid

This is my third go at SRF Black brisket. I did it nekkid the whole way. Probed like buttah at around 200F after about 12 hours. Is resting now.

@dmourati, that’s how I ran mine on New Years Eve. 12.5 hours, no wrap. I foiled and into a cooler for about 2 hours. Threw it back on the XL for about 15-20 minutes to dry the bark back out. Best brisket I’ve ever had
