Pulled half a strip lion from the freezer and put it in a134° bath for two hours.
Fired up the minimax
Let the loin rest and seasoned with salt, pepper and garlic. Then seared on minimax.
Then got busy entertaining my guest and didn't get any pictures until cleaning up
My mother, who's 87, thought this was the most tender and juiciest beef she ever had.
This was the first time she ever had steak that wasn't cooked to death. She's was the no pink club.

Jamaican Pepper Steak:
ATK recipe. It's a fusion dish between the indigenous people of Jamaica and chinese immigrants; I thought Jamaica was mostly indigenous and a lot of African slaves, but a quick check, when the British ruled the island they brought in many Chinese "indentured servants".
It's pretty much a standard chinese beef-n-pepper stirfry, but with the unusual extras of allspice, rum, and scotch bonnets. It was good, not spectacular.___________"They're eating the checks! They're eating the balances!"
