Is where I bought what seems like a lifetime supply… @MaskedMarvel just dove in to the chamber sealer market too, I’d be curious to know where he bought his bags.

@CTMike I buy from our local restaurant supply store, won't work for you. Do a search, others have posted about good sources of chamnber sealer bags for the US market.
Edit: just saw @alaskanassasi 's post above

My biggest issue is I’ll seal something walk away and then find it in the chamber sealer in the morning!
We plug our on demand hot water circulation pump and an analog radio into the same power bar, the radio reminds us to power off the pump after use. The same setup can work for you.

If you're planning on leaving it on the countertop, underneath some cupboards, make sure to measure if you have enough clearance; I didn't.  The Vitamix is very tall.
In fact, if my KitchenAid didn't have a soft plastic lid, it would not have fit either.

You know you are in the weeds when the blender is a topic of dispute.

When I finally got promoted to 1st Lieutenant, I was able to afford some appliances, and while in the BX I found a "damaged" Oster multi-machine, marked down from $120 to $60.  I asked a clerk if she knew what was wrong with it, and she said it had a melted spot, probably from a burner or cigarette, but it otherwise worked.
It had a beater-style mixer, a blender, a juicer, and a smallish food processor.  I was just learning how to, and getting into, cooking (watching Julia and the "Frugal Gourmet" (may he rot in hell) on PBS) and was having a ball using that Oster.  I wore it out; by then I'd pinned on Captain and could afford KitchenAid separates, and at the price I thought they'd last a lifetime (the mixer is still kicking, the FP needed one repair, and the blender's touchpad gave out with no replacements found.)
I still have fond memories of that Oster, however.

    1. I did use Kohl’s cash!
    2. We are definitely in the weeds, my lawyer can buy an X5 Vitamix for every room.
    3. Moving to foreign country isn’t a bad idea
    4. Margaritas will be on tap!
    5. Why do we hate the Frugal Gourmet?

That, sir, is an absolute thing of beauty.  True art and Chad Nichols makes legit steel! Very very nice heirloom piece.

looks like 300 layers. i have a c/s blade (different manufacturer) with 70 that sharpens nice but gets even sharper when you use it. it needs to form tiny micro chips on the edge with use.  with 300 i imagine it will be twice as sharp

from google he uses zdp-189 damascus, its hard at 64-67, his less expensive knives are vg-5 around 60 rockwell (also hard). that zdp 189 will be hard to sharpen if you let it go, best to fine tune it more often than not
