    @gonepostal - When you pull this together seek out the wisdom of @The Cen-Tex Smoker.  He will make sure you hit all the spots, some of which are a bit outside Austin.  If he suggests meeting at his off residence office, the "Deep Eddy Cabaret" go for it.  Great eats await and quite an entertaining and learning experience.

    No doubt after that video.  Dang- being in the Houston area I would guess you have a great shot at standing out with much less competition than closer to Austin.  Independent of that thought, that is some impressive groceries right there.
    Do you manage the meat locations and move based on the temperature variables of your rig or once you get it stable (and that takes a fair amount of time) are you good with how it performs?

    Good luck on your BBQ adventure ole buddy. The grub looks outstanding. The tortillas and ribs really grabbed my attention. I might be a backwoods tobacco spitting redneck, but I am a real sucker for good tortillas and Mexican food in general.  The tortillas look like heaven.

    Nah, I may rotate a little, but I don’t temp check my butts until a couple hours after I wrap. I just kinda keep track I my head.  Grouping them by how close they are is something I should do if I wasn’t so lazy lolol

    Pit performs awesome.  Very satisfied!  Gets up to temp quick and maintains pretty well.

    man I am going to be in Houston on the 17th for 4 nights.  I might just drive around and look for @cazzy .  lol  @The Cen-Tex Smoker  I am mad at myself.  I was in Austin during Thanksgiving week and didn't have any bbq.  I should have hit you up for a get together.  I most certainly will next time I am in Austin.  Will probably be in January.

  • I couldn’t agree more. Was stuck with family most of the time. I did make it out to Hays City Store to catch the game Friday morning. Also checked out a new place called The Armadillo Den that is next to Moon Tower. Pretty cool place. Besides that sadly not much.

    Oh I know, it’s one of my favorites. I still need to try la  bbq, plus I’m sure many others. Have done franklins and Loro.
