I've experimented with roast potatoes in a conventional oven, never occurred to me to do them in the Egg until a few weeks ago. After an abortive first attempt where I used a cast iron skillet without seasoning it first (oopsie), we've now got a new way of crisp, fluffy roasties. Details in the link below:

@dmourati thanks, I have read that article, it's very good. I personally disagree with what it says about leaving the starch in, I prefer removing it by washing the potatoes thoroughly, gives a cleaner taste. Just personal preference.
