Sambal Chicken Skewers and a Thai Veggie Crunch Salad

We really enjoy the flavor of Sambal Olek so we just keep playing with it and different additives. Here’s the latest meal.


Took some BLSL thighs and cubed up to marinate in SO,garlic,ginger,sriracha, fish sauce,brown sugar, rice wine and soy. Let it hang out for 4hrs in the fridge. Saved 1/2 the marinade to reduce for basting later.
Meanwhile I prepped Napa Cabbage, red and yellow peppers,radishes,cukes, edamame and got it all mixed up then added some mint, Thai Basil and chives. The dressing was the kicker. It was mix of orange zest & juice,lime juice,honey,ginger,garlic,sesame oil, soy,SO and EVOO. Took the stick blender and combined everything then added roasted peanuts and blended it again to thicken it up. The taste was unreal.
Skewers on the small. No idea what the temp was cause I was in grillin mode. This was just after a brushing of the sauce.

And plated up with the salad and a few more peanuts.

All in all this is a keeper. Perfect blend of sweet n savory with a medium amount of heat in the chicken.

Great googly moogly. I think this might be my fav of your recent cooks. The chix looks outstanding.
The salad dressing sounds like it would make for a great marinade too. When you blitzed it the second time, after adding the peanuts, did it become like a thicker emulsion? @caliking - the dressing could’ve went either way. I chose to go smooth but it still had a grainy texture even after multiple blitz. I think if a totally smooth texture is desired then peanut butter would be the route to go.I bet your right on the marinade. Next experiment.
