Freezing Brisket

My Mother-in-Law wanted a brisket for our trip to the beach. The question is it will finish sometime tonight then my wife is taking with her tomorrow to the beach. How long after it sits tonight before I put it in the freezer? Don’t judge me, it’s what they want.

If you are eating it this weekend it does not need to be frozen. But if you want to freeze it just let it come down in temp for an hour or so unwrapped on the counter and then freeze it.

No need to freeze , but if you have extra ice, I'd quick chill it after its rest

They probably won’t eat it till Monday or Tuesday. The bad part is I will never really know how well I did.
