SV’d Chilled n Seared Chops

Bought a pork loin on sale last week and chopped up some for chops. Mrs3969 doesn’t like thick chops so hers were 3/4 and mine 1 1/4.
They went into the SV @135 for 2 1/2hrs with S&P, butter and a few sprigs of fresh thyme. Then they went into an ice bath to chill for the sear section. This worked great getting the 2 thicknesses done at the same time without overcooking the thin one.

And plated with some broccoli slaw that Mrs3969 whopped up and some fresh maters.
Big shout out to @The Cen-Tex Smoker the chilling info in an earlier thread. Worked great. Thanks for looking.

@dweebs0r - it’s a 10 1/2” Lodge Griddle that I cut the handle off. The done will not close. I bought this set to use on the small when it was on sale for $59 I cut all the handles off.
