I Have A Bone to Pick. Beef Rib Edition

Greetings, Eggheads. I did a rack of Creekstone beef ribs today on the large. Using that Rockwood, as always, and some post oak chunks. The egg ran 250-260* for the duration and these took around 6 hours. Brisket on a stick is never a bad thing
