    Ready for firing the fire on Thursday.  Love a brisket cook.  Most fun you can have with a BGE.  (10.9 lbs after 11.6 going in-great butcher job.)

    I always check as I am not proficient enough the with the jiggle criteria to call the finish.  It was anywhere from 202-206*F in the flat and the feel was there.  Never check the point.  
    BTW- @YukonRon you may (or not) want to scroll up a few posts as SRF has a brisket sale for today only.  The link is there.  Always willing to help you with your great forum term of wallet genocide.  
    Clear your calendar and hit up the virtual zoom session tomorrow night.  Definitely entertaining.

    @lousubcap - that looks amazing!! Well done.  I have only made a few attempts at brisket and nothing spectacular yet.  I blame it on the cow, because no way could it be the cook  :):):)

    I have already checked out the SRF deal, got two on the way. Suzy will not be real happy upon arrival, but she shall not challenge once in from the egg.
