    Chef John has a recipe for burger/split top hot dog buns too (same recipe, different method). Haven't tried either, but I plan to. His looks easier. =)


    That does look a bit simpler. Not by too much though.  Love Chef John!

    The Josh Weissman recipe makes a brioche type bun, which has a  somewhat more layered crumb. I think the difference is that one recipe uses melted butter, while the other kneads in cold butter, to give it that brioche element. 

    American-style butter works better for these, as the water in the butter gives the buns more lift as they bake.
