Smash burgers with homemade Japanese Hokkaido bread buns

Made a burger sauce with mayo, mustard, goulash cream and chopped koolickles.

Homemade burger buns from scratch using a Japanese Hokkaido milk bread recipe, word of the week is: Tangzhong!  They are light, fluffy, buttery, think brioche on steroid!  Recipe on youtube: https://youtu.be/gTGSUYMu6Ns

Topped with heirloom tomato, iceberg lettuce, caramelized onions and American cheese.

    Cool, watched the video.  The Tangzhong is intriguing, kind of like Biga or Autolyse?  However, with the current yeast shortage (worth its weight in gold) there's no way I'm 'squandering' 1 TB of yeast for 6 buns  =)  I may try it with SD or very little yeast and let it ferment at RT for a day.  Glad I got into SD baking which takes care of our daily bread.

    @Canugghead It is basically a roux (with no fat), it is pre-gelatined flour.  I can ship you a pack of yeast, no shortage here.

    That looks great. You nailed it down down to the checkered paper liner. Those rolls have been on my list since @The Cen-Tex Smoker posted about them, but I haven’t gotten around to them quite yet. Soon.....
    Same type of recipe?  Seriously, try them, it is a game changer, you will not believe the texture.  The youtube channel of this guy is legit.  I’ve tried a few of his recipes and they all turned out awesome.

    It's the same Joshua Weissman recipe that Cen-Tex posted not long ago. Be careful though, that YT channel has rabbithole written all over it.

    I discovered the channel a couple of days ago and yes it is a rabbit hole 😂😂😂

    I already tried a couple of recipes and they all turn out awesome.  Diner rolls, sticky buns, hamburger buns, chicken nugets... The guy needs to stick in a few workout tips 😂😂😂

    Chef John has a recipe for burger/split top hot dog buns too (same recipe, different method). Haven't tried either, but I plan to. His looks easier. =)

    I did the King Arthur New England Hot Dog buns recipe (potato bread) and it was good but I will definitely try this recipe with the hot dog pan. The Hokkaido bread recipe is a keeper.  I’m actually ordering a Pullman loaf pan right now for sandwich bread with this recipe 😂

    I used all purpose flour (Canadian) what brand do you have?  What is the protein content? Look at the label on the back of the bag (you may have to divide total protein by the portion size).  Canadian all purpose has more protein than typical American all purpose.

    Hell to the yeah. Made 2 pints of the chili oil, thinking I would portion out the second jar and share with friends. Didn't happen. Its addictive.

    It’s mostly time-wasting garbage. I think I saw that on r/sourdough or r/breadit. It could have been in r/rareinsults which is a great and funny time waster.
