I am so very happy that worked for you. It is the number 1 thing asked for here at home.

Your cook looks very delicious, and that sammie, Wow!!!

I wish that years ago when we decided to get rid of the peach orchard, I had known about selling the wood for smoking. Instead, we pushed up two acres of trees and burned them. Later we pushed up ten acres of apple trees.
I didn't realize that there was a market for the wood.
Any eggers would have been welcome to the wood for free.
If you really like the wood for smoking, planting a few trees with seasonal pruning will keep you supplied with smoking wood.

I planted a sugar maple for that reason. Love it on pork bellies, poultry and seafood.

Fast growing high yield for wood. Also have a cherry tree we will utilize as well..

Not going to lie, best I’ve ever had on a butt!

My neighbors all seem to gather when I getting ready to take that butt off the rack, they all want a bark bite. They usually bust into my wine fridge while doing so, but this time....due to Covid 19....we got the bark. You really find out how much our children hate one another when that is fought over.

Glad it turned out for you.

I gave this a go over the weekend. First time brining a butt and using peach preserves for any pork cook for me. I did add an extra layer of rub on top of the preserves which I will skip next time. Thanks for sharing Ron.
