meat for snack sticks?

I am pretty much limited to pork or beef right now and wanting to make some snack sticks, looking for recommendations on meat combinations.

    Sky is the limit , IMO a good spice mix/recipe means more than the protein..some game can be to "gamey" but depends on your taste,I stick beef and pork for snack sticks, chipotle being a favorite

    What kind of cut would you use for beef?

    snack sticks/jerky etc you would want a lean cut like eye of round as fat spoils quickly, that being said I have no problem using a fattier cut like chuck if I am not to concerned about shelf life.............If it is going to be consumed "soon" use a fattier cut, long term lean 

    I have even made snack sticks with the same mixture I am making for sausage, just smoke or heat to a safe IT and make sure you are using cure
