A Twist on pulled pork

I’m wondering if anyone has butterflied, then marinated a pork butt. Then tried it back together and smoked it. The intention is to pull it, not sliced like porchetta.
Looking to recreate El Cochinita pulled pork recipe for a Cuban sandwich. Really want the marinated to penetrate all the way through.

The recipe sounds like a standard Perníl/lechon asado-style marinade. I would treat the shoulder like one does with one of those recipes and stab the roast like it owes you money. I do this often(my wife is Puerto Rican so perníl is a common celebration meal) and the flavor is throughout the meat. You could also inject the roast with Mojo Criollo.
