Brisket slicing question

What do you guys use to slice brisket? I don’t have many nice knives but I’m starting to add to my collection. I normally slice brisket with a cheap chefs that’s hard to keep sharp. My wife likes thin slices and it’s very hard with that chefs knife I have since it won’t stay sharp. I’d like to replace that one with a nice chefs knife or something else that may be better for slicing brisket.

I've got the Dexter that @lousubcap mentioned. Works great for brisket and ribs.

my old 13 inch slicer, 70 years maybe, is a lamson. i dont cook brisket often but my newer
Messermeister Meridian Elite 12 in. Granton Edge Salmon Slicer is waiting

I like the price point on the Dexter for sure and I use Dexter knives for cleaning fish. I have trouble keeping those sharp which isn’t a big deal because the sharpen easily. How do you sharpen the serated blade though?

Never had to. I've had mine for probably 3 years. Only used to slice ribs and brisket. dexter here too. If you want a nicer one, Wusthof makes a nice slicer as well. I think you can pick it up around $100 or so. They sell it as a brisket knife around here. I’ve used it, it is nice.Keepin' It Weird in The ATX FBTX

I have the Messermeister and Dexter. The Messermeister is better if you like extremely thin slices, but I slice thick because I'm lazy.

I use a 10 inch schmiter (spelling?) type that is dexter russel and sharpen it with an electric 15 degree sharpener and it cuts much better than my serrated dexter russel you link to here.I XL and 1 Weber Kettle And 1 Weber Q220 Outside Alvin, TX-- South of Houston

If you are really using this for brisket I do recommend a serrated edge. Even the sharpest chef knife or slicer can tear the bark off. I only use my dexter for bread and brisket. Its the right tool for those jobs. Plus, if you dont have anything with a serrated edge, you could add something useful that you don’t already own to your toolbox.Keepin' It Weird in The ATX FBTX

Look for a restaurant supply store near you. Go look at their chef's knives. I found a large scimitar shaped cutter for $10 that has worked great. They also have long slicers at reasonable prices.

better yet. a 7 inch electric meat slicer. $60. two min and its small enuff to store anywhere. your new best friend. There are 70 to choose from.
