SRF Gold Wagyu Brisket for Christmas Brunch

Got this SRF Gold 14 pounder, did some very light trimming and seasoned with Oakridge BBQ Black Ops Brisket Rub. 

0100: (Pacific time) Egg stabilized at 250° with Rockwood and two fat chunks of hickory. 

0730: Brisket internal temp at 161°

0930: brisket internal temp at 163° - photo taken just before wrapping in pink butcher paper.

  • Best brisket I’ve ever made or ate. Any of you on this forum that haven’t pulled the trigger on an SRF brisket, the rumors are true. Out-freaking-standing. I’m converted (aka ruined) now by SRF... 

    It rested in the cooler and stayed warm for 2.5 hours. Sliced and served. I pulled it at 185° because it probed super tender. 

    The flavor is totally different, in a good way, than a Costco prime. Nothing wrong with Costco prime, but wow. SRF is amazing. Super rich. Super beefy. Very very tender. 

    Wife was very happy, hopefully that will pay off later...

    Totally was. I snuck back into the kitchen after opening Christmas gifts to put the brisket in a ziplock and hidden in the back of the fridge, and grab a beer and glass of bourbon. Breakfast of champions tomorrow....

  • Nice job. Better meat = better brisket for sure. We are lucky to have a lot of choices down here but SRF has always done me right with brisket and steaks.
