    That’s a good point.  I did build it up more in the center so hopefully it will get me through.

    I have had that happen only once. I fill mine to just below the bottom of my plate since then.

    It was an odd cook, where mass and time were way unusually off, should have been a 12 hour cook,  and ended being almost 20 hours.

    Of course there has not been a cook since that spiraled off the grid like that one time, but should it happen, I am good.

    I guess I can always refuel if I have to.  Hopefully I won’t have to but at least I have the ps woo to make it easier.  One question on adding more lump.  After I add more, would I need to wait for the new lump to burn clean before putting the butt back on?  I’m thinking yes.

    I really don't think you will have to reload. If this happened to me and I ran out I would just wrap it and finish it off in the oven. That being said, if you did add more lump I would probably give it a few minutes to burn clean but assuming you still had a fire burning it will stabilize fairly quickly. I did this recently with my small egg.  I cooked a butt and when I removed it I threw in some additional lump to cook some apps while the butt was in FTC. The fire "recovered" within a few minutes and I was ready to cook. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    That looks great. In my opinion a good ftc rest makes it even better

    I was impressed.  The bone came right out with no resistance at all.  It was in the cooler for about an hour and a half.
