Egg sluts

Attempting my first take take on the sluts.
Garlic, butter, salt, pepper, potato purée on the bottom. Egg over the top. Sous vide for 30 minutes. Topping with grey sea salt and chives. Serving with truffle butter toasted baguette.

They were very good! The buttery creamy potato purée when mixed up with the yolk was very tasty.JohnInCarolina said:Interesting. How were they?
I filled a bunch of jars with the left over potato purée about 1/3 of the way full and put them in the fridge. When ready to cook I can just top it with a fresh egg and recreate the dish with minimal effort.Brandon - Ohio
