Whole boneless stuffed chicken

Here is what is on the menu tonight:
Bought a Bell + Evens
Then I de boned it completely except for the very end of the legs:
Then stuffed it with parma, prosciutto, spinach and cream cheese:
Rubbed it with lemon infused evoo ans Emeralds chicken rub:
On the egg it went, went down for 40 minutes @350 with some cherry. I should of let it go longer for a browner exterior but I was starving:
And finally plated:

Great prep work and cook right there. I follow Jacques Pepin's video (linked here: https://www.youtube.com/watch?v=Ku5p1CcGn70 ) with several pauses to get the chix good to go. Clean wrap and tie on that bird. Outstanding. Congrats.
