Whole boneless stuffed chicken

Here is what is on the menu tonight:

Bought a Bell + Evens


Then I de boned it completely except for the very end of the legs:


Then stuffed it with parma, prosciutto, spinach and cream cheese:



Rubbed it with lemon infused evoo ans Emeralds chicken rub:



On the egg it went, went down for 40 minutes @350 with some cherry. I should of let it go longer for a browner exterior but I was starving:



And finally plated:

    Great prep work and cook right there.  I follow Jacques Pepin's video (linked here: ) with several pauses to get the chix good to go.  Clean wrap and tie on that bird.  Outstanding.  Congrats.

    Louisville;  "indeterminate Jim" here; L & S BGEs, PBC, Lang 36; Burnin' wood in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer.

    @lousubcap That is the one I used, he said "a person shouldn't take more then 2 minutes to de bone a chicken" I'm glad I don't work for him...

    There’s a meat place here that specializes in them. It’s amazing how fast they can debone em.
