Next time, scale it and de-head it. Slice down the center of the back to expose back bone. Slice from the vertebrae to the top and bottom edges of the ribcage to expose them, butterflying the fish. Clip the backbone and ribs out. Now you have a boneless flounder capable of being stuffed AND THEN pan fried. One of my absolute favorite fish to eat
