Salsa-Pepper Jack Chicken

Checked the fridge and freezer to find something to put together.  Came up with this and we really liked it.  Chicken with salsa and pepper jack cheese. N doctored some saffron rice with taco seasonings and cilantro.  We’ll do this again.
