Oxtail Tacos

Options
Rubbed then SV’d 2lbs of oxtails at 175° for 25hrs.  Then hit an ice bath before goin to the egg for a 2 1/2hr smoke over cherry. 


Warmed up some corn tortillas on the small since it was warm from cooking a fatty 


And served up with pickled onions,radish slices and cilantro 


The taste and texture was awesome but I honestly think I can get the same taste from a chuckie.
