Beef Ribs

I have been looking for a source for really nice beef ribs. It took a while, but found a butcher shop in Lexington NC that had some beautiful chuck ribs.This rack was about 8 pounds. Set the smobot for 250F, fat side down for a couple hours and then turned the rack over for most of the cook.
After about 4 hours into the cook.


Flipped them over one more time, probed like butter at 200IT.

Time to eat.
Could only eat 1 each, so I had some leftovers.

I will be doing these again. Thanks for looking!
